For the Dough
2 cups warm water
4 tbsp sugar
½ cup oil
2 tbsp yeast
6 cups flour
3 tbsp powdered milk
1 tbsp baking powder
1 tsp salt
For the Pizza Sauce
2 tbsp oil
1 small onion, finely chopped
1 garlic clove, minced
5 tomatoes, diced
Salt & black pepper to taste
½ tsp thyme
2 tbsp ketchup
For the Toppings
Olives, sliced
Bell peppers, diced
Sausage, sliced
Mozzarella cheese, shredded
Instructions
Prepare dough: Mix warm water, sugar, and yeast. Let sit until frothy. Add oil. In another bowl, combine flour, powdered milk, baking powder, and salt. Gradually mix dry into wet. Knead 5–7 minutes until smooth. Let rise 1 hour.
Make sauce: Heat oil, sauté onion and garlic. Add tomatoes, salt, pepper, thyme. Cook 10 minutes until thick. Stir in ketchup. Set aside.
Assemble pizzas: Preheat oven to 220°C (430°F). Punch down dough, divide into small rounds. Roll to ¼ inch thick. Place on baking sheet. Spread sauce, add toppings.
Bake: Bake 12 minutes until crust is golden and cheese bubbly.
Tips
Extra cheesy: Add cheddar or parmesan with mozzarella.
