Homemade Beef Vegetable SoupIngredients:1 lb (450g) beef stew meat (cut into bite-sized pieces)2 tbsp olive oil1 small onion, chopped3 cloves garlic, minced3 carrots, sliced2 celery stalks, chopped2 potatoes, peeled and diced1 cup green beans (fresh or frozen)1 cup corn (optional)1 can (14 oz / 400g) diced tomatoes6 cups beef broth1 tsp salt (adjust to taste)½ tsp black pepper1 tsp dried thyme1 tsp paprika1 bay leafInstructions:Brown the beefHeat olive oil in a large pot over medium-high heat.Add beef and sear until browned on all sides (about 5–7 minutes). Remove and set aside.Sauté aromaticsIn the same pot, add onion, carrots, and celery.Cook for 4–5 minutes until softened.Add garlic and cook 1 more minute.Build the soupReturn beef to the pot.Add potatoes, green beans, corn, diced tomatoes, and beef broth.Season & simmerAdd salt, pepper, thyme, paprika, and bay leaf.Bring to a boil, then reduce heat and simmer uncovered for 45–60 minutes, until beef is tender.Taste & finishAdjust seasoning if needed.
