Thai Chicken Lettuce Wraps

For the Chicken Filling:
– 1 lb ground chicken (or finely chopped chicken breast)
– 2 tbsp sesame oil (or olive oil)
– 1 cup bell peppers, diced (any color)
– 1 cup carrots, shredded
– 2 green onions, chopped
– 2 cloves garlic, minced
– 1 tbsp fresh ginger, minced
– 3 tbsp soy sauce
– 1 tbsp fish sauce (optional)
– 1 tbsp honey or brown sugar
– Juice of 1 lime
– Salt and pepper to taste
– Lettuce leaves (such as butter or iceberg) for wrapping

### Instructions:
1. Cook the Chicken: In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Then, add the ground chicken. Cook until browned and fully cooked through, breaking it apart with a spatula as it cooks.

2. Add the Vegetables: Once the chicken is cooked, add the diced bell peppers, shredded carrots, and chopped green onions to the skillet. Stir well and cook for another 3-4 minutes until the vegetables are tender but still crisp.

3. Make the Sauce: In a small bowl, mix together the soy sauce, fish sauce (if using), honey, and lime juice. Pour this sauce over the chicken and vegetable mixture. Stir to combine and let it cook for an additional minute. Taste and season with salt and pepper as needed.

4. Assemble the Wraps: To serve, spoon the chicken filling into individual lettuce leaves. You can add additional toppings like chopped peanuts, cilantro, or extra lime juice if desired.
