Sweet Potato Pie

Ingredients:
2 cups cooked and mashed sweet potatoes (about 2 medium sweet potatoes)
1 cup sugar
1/2 cup milk (or coconut milk for a dairy-free version)
1/2 cup unsalted butter, melted
3 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 unbaked 9-inch pie crust (store-bought or homemade)
Method:
Prepare the Sweet Potatoes:

Preheat your oven to 350°F (175°C).
Peel and chop the sweet potatoes, then boil them until tender. Drain and mash until smooth.
Mix the Filling:

In a large bowl, combine the mashed sweet potatoes, sugar, milk, and melted butter. Mix until well combined.
Add the eggs, vanilla extract, cinnamon, nutmeg, and salt. Beat until the mixture is smooth and creamy.
Assemble the Pie:

Pour the sweet potato filling into the unbaked pie crust, smoothing the top with a spatula.
Bake:

Bake in the preheated oven for about 45-50 minutes, or until the filling is set and a knife inserted into the center comes out clean.
Cool and Serve:

Allow the pie to cool at room temperature. Serve it warm or chilled, optionally topped with whipped cream.
