Ingredients:*
– 4 boneless, skinless chicken breasts
1/2 cup chopped fresh spinach
– 1/2 cup crumbled feta cheese
1/4 cup chopped onion
– 2 cloves garlic, minced
– 1 tablespoon olive oil
Salt and pepper, to taste
– 1 tablespoon lemon juice

1. Preheat oven to 375°F.
2. In a bowl, mix spinach, feta cheese, onion, garlic, salt, pepper, and lemon juice.
3. Lay chicken breasts flat; make a horizontal incision to create a pocket.
4. Stuff each chicken breast with spinach-feta mixture.
5. Roll and secure with toothpicks.
6. Drizzle with olive oil.
7. Bake for 25-30 minutes or until cooked through.
