Instructions:
Get the mold ready: Coat a baking dish that measures 26 × 15 cm (10.2 × 5.9 inches) with vegetable oil and cover it with parchment paper.
Prepare the honey and sugar by cooking them. In a pot, mix together ½ cup of honey and ¾ cup of sugar. Heat gently, stirring occasionally, until the sugar dissolves completely and the mixture is smooth.
Whisk the egg white. In another bowl, whisk one big egg white with a little salt until it forms stiff peaks.
Mix egg white with honey. Remove the heat from the honey mixture and slowly mix in the whipped egg white, stirring fast to blend it without cooking the egg white.
Prepare the mixture by cooking it. Put the pot back on the stove over low heat. Keep stirring non-stop for 20-25 minutes until the mixture becomes thick. Test: Put a little bit of the mixture into cold water. If it becomes like gum, it is done.
Include the nuts. Add 1 cup of toasted hazelnuts and ½ cup of toasted peeled almonds. Mix well.
Mold the nougat. Put oil on your hands and push the nougat mixture into the mold, pressing it down softly.
Enjoy the Nougat Collection: Cover it and leave it at room temperature for 2 hours to firm up.
Serve and enjoy: After it has hardened, take out the nougat from the container and slice it into pieces.
