Ingredients (Serves 4)
For the dough
3 cups all-purpose flour
1 teaspoon salt
1 tablespoon olive oil
About 1 cup warm water
For the filling
300 g fresh spinach, finely chopped
1 large egg
200 g grated Mediterranean melting cheese (kasseri, mozzarella, or mild sheep’s cheese)
2 tablespoons grated hard cheese (Pecorino or Parmesan)
1 small garlic clove, finely minced
Salt and black pepper, to taste
For cooking
Olive oil, for brushing or frying
Instructions
Make the dough
In a bowl, combine flour and salt. Add olive oil and gradually mix in warm water until a soft dough forms. Knead for 6–8 minutes until smooth. Cover and let rest for 20–30 minutes.
Prepare the filling
Place chopped spinach in a bowl. Add egg, grated cheeses, garlic, salt, and pepper. Mix well. If the spinach releases liquid, squeeze lightly to remove excess moisture.
Shape and fill
Divide the dough into equal balls. Roll each into a thin rectangle or circle. Spoon filling onto one half, spreading evenly. Fold over and seal the edges firmly.
Cook
Heat a non-stick pan over medium heat and lightly brush with olive oil. Cook the flatbreads for 2–3 minutes per side until golden and crisp, pressing gently so the cheese melts evenly.
Serve
Remove from the pan and keep warm under a cloth. Cut into pieces before serving.
