Ingredients:
1 lb chicken breasts
2 tbsp olive oil
4 cloves garlic, minced
2 cups broccoli florets
1/2 cup cherry tomatoes, chopped in half
1 cup spinach
1/2 cup mozzarella cheese, shredded
4 oz cream cheese
1 tsp Italian seasoning
1 tsp black pepper
1/4 tsp salt (or more to taste)
Method;
Put the chicken in the oven:
The first step is to cut the chicken breasts into thin strips or chunks that are suitable for snacking. Add some salt, black pepper, and Italian seasoning to them, and then season them.
To prepare the chicken:
In a large pan, bring the olive oil to a temperature of medium heat. Sauté the garlic that has been minced for around thirty seconds, or until the aroma is released. Put the chicken pieces that have been seasoned into the skillet and cook them for approximately five to seven minutes, or until they are golden brown and no longer pink on the interior. Put the chicken in a separate bowl after removing it from the pan.
include Spinach and Cream Cheese: Bring the temperature down to a low setting and include the cream cheese into the pan. Give it a stir until the cream cheese has melted and the veggies are well covered. The spinach should be added and stirred for a further two minutes, or until it has wilted through.
incorporate with Chicken: After the chicken has been cooked, place it back into the pan and thoroughly incorporate it with the creamy vegetable mixture. For a further two minutes, continue to cook together in order to reheat the chicken and combine the flavours.
Adding Mozzarella: After the chicken and vegetable combination has been combined, sprinkle shredded mozzarella cheese on top of it. The cheese should be melted for a minute or two, at which time the pan should be covered with a lid.
Serve: Serve while still hot, making sure that each dish has a substantial quantity of chicken, veggies, and cheese that has been melted.
