Fritters with Zucchini and Potatoes

The ezoic recipe calls for three small courgettes, or grated zucchini, two medium potatoes, one medium onion, finely chopped, and two medium carrots, grated.

2 big eggs, whisked 4 to 6 teaspoons of breadcrumbs
Cheese (ezoic, mozzarella, cheddar, or your choice) grated to taste
Fry pan oil
(Add salt to taste)

Here are the directions:
Get the Vegetables Ready:
Potatoes and zucchini should be grated. Toss them in a basin and season with a dash of salt. Ten minutes should be enough time to allow them to soak up any extra moisture.
The veggies should be thoroughly wrung out with a clean kitchen towel after 10 minutes.

Combine the Substances:
Gather the grated zucchini, potatoes, onion, carrots, and parsley in a big basin.
Whisk in the egg mixture, then stir in the breadcrumbs, cheese, salt, and pepper. Combine all ingredients by mixing well.

Create the Fritters:
In a skillet set over medium heat, warm the oil. When the mixture is heated, make fritters by scooping spoonfuls and gently pressing them down.
Fry for three to four minutes each side, or until crispy and golden.

Before serving, drain the fritters by removing them from the pan and setting them on paper towels. Warm it up and top it with yogurt or a sauce of your choice.
