200-400 g (7-14 oz) cabbage, thinly sliced
1 carrot, grated
1 green apple, thinly sliced or julienned
1 spring onion, finely chopped
Dill or parsley (optional), chopped
Juice of 1 lemon
Olive oil, to taste

Directions:
Combine Ingredients:
In a large mixing bowl, combine the thinly sliced cabbage, grated carrot, and thinly sliced green apple.
Add the finely chopped spring onion and, if using, the chopped dill or parsley.
Dress the Salad:
Drizzle the salad with the juice of 1 lemon and a generous splash of olive oil.
Season with salt to taste and toss everything together until well combined.
Marinate and Serve:
Let the salad sit for a few minutes to allow the flavors to meld together.
