Easy cherry pie bites

Ingredients

For the crust:

2 cups all-purpose flour

1/2 cup unsalted butter, chilled and diced

1/4 cup granulated sugar

1/4 teaspoon salt
6-8 tablespoons ice water

For the cherry filling:

2 cups fresh or frozen cherries, pitted and halved

1/2 cup granulated sugar (adjust based on sweetness preference)

2 tablespoons cornstarch
1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

For assembly:

1 egg, beaten (for egg wash)

Powdered sugar (for dusting, optional)
Instructions

Prepare the Crust:
In a large mixing bowl, combine flour, sugar, and salt. Add the diced butter and mix until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, until the dough comes together. Do not overwork the dough.

Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Make the Cherry Filling:
In a medium saucepan over medium heat, combine cherries, sugar, cornstarch, lemon juice, and extracts. Cook for about 5-7 minutes until the mixture thickens and bubbles. Remove from heat and let cool.

Assemble the Bites:
Preheat your oven to 375°F (190°C).

Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut into squares (approximately 3×3 inches).

Place a teaspoon of the cherry filling in the center of each square. Fold the corners over to create a pocket and press edges to seal. Place on a baking sheet lined with parchment paper.

Brush each pie bite with beaten egg for a golden finish.

Bake:
Bake in the preheated oven for 15-20 minutes, or until golden brown. Remove from oven and let cool slightly.
