Creamy Cassava Roll with Latik Filling

INGREDIENTS:

For Cassava Mixture:

2 cups grated cassava

1 cup coconut milk

½ cup condensed milk

¼ cup sugar (adjust to taste)

¼ tsp salt

For Latik Filling:

1 cup coconut milk

½ cup brown sugar

¼ tsp salt

For Coating:

1 cup grated coconut

PROCEDURE:

Prepare the Cassava Mixture
In a bowl, combine grated cassava, coconut milk, condensed milk, sugar, and salt. Mix well.

Cook the Mixture
Pour into a greased pan and steam for 25–30 minutes until firm and cooked through.

Make the Latik Filling
In a pan, combine coconut milk, brown sugar, and salt. Cook over medium heat until thick and sticky. Let it cool.

Shape the Roll
While cassava is still warm, flatten it on a clean surface. Spread latik filling evenly.

Roll and Slice
Carefully roll into a log. Let cool, then slice into portions.

Coat with Coconut
Roll each piece in grated coconut for extra flavor and texture.
