Ingredients
For the Chicken:
Chicken: 1 lb chicken breasts or thighs, cut into bite-sized cubes
Oil: 1 tablespoon cooking oil (olive oil or avocado oil work perfectly)
Paprika: 1 teaspoon (smoked or sweet paprika)
Black Pepper: \frac{1}{2} teaspoon
Salt: \frac{1}{2} teaspoon (or to taste)
Garlic Powder: \frac{1}{2} teaspoon (optional, for extra flavor)
For the Firecracker Sauce:
Cottage Cheese: 1 cup (full fat or low fat)
Parmesan Cheese: \frac{1}{3} cup freshly grated Parmesan
Spicy “Firecracker” Kick: \frac{1}{2} to 1 teaspoon red pepper flakes, or 1 tablespoon of your favorite hot sauce/Sriracha (adjusted to your heat preference)
Instructions
Step 1: Blend the Sauce
Add the 1 cup of cottage cheese, \frac{1}{3} cup of grated Parmesan cheese, and your chosen spicy element (red pepper flakes or hot sauce) into a small blender or food processor.
Blend on high for 30–45 seconds until the mixture is completely smooth, creamy, and no cottage cheese curds remain. Set aside.
Step 2: Season and Sear the Chicken
Place the chicken cubes in a bowl and toss them with 1 teaspoon paprika, \frac{1}{2} teaspoon black pepper, salt, and optional garlic powder until evenly coated.
Heat 1 tablespoon of oil in a large skillet over medium-high heat.
Add the chicken cubes to the hot skillet in a single layer. Cook for about 6–8 minutes, stirring occasionally, until the chicken is beautifully golden-brown on all sides and cooked through (internal temperature reaches 165°F / 74°C).
Step 3: Combine and Simmer
Turn the skillet heat down to low.
Pour the blended creamy cottage cheese sauce directly over the hot chicken in the skillet.
Stir everything together gently to coat the chicken entirely. Let it simmer on low heat for just 1–2 minutes until the sauce is warm, velvety, and clings to the chicken.
Important Note: Do not let the sauce boil on high heat, as cottage cheese can separate or curdle if overheated. Low and slow is the key!
Step 4: Garnish and Serve
Remove from heat immediately once warmed through.
Garnish with a pinch of extra red pepper flakes and freshly chopped parsley if desired.
