Ingredients:
1 cup oatmeal
150 ml warm milk
2 apples, peeled, cored, and chopped
20g butter, melted
A pinch of vanillin (or vanilla extract)
2 eggs
50g nuts, chopped (e.g., walnuts, almonds, or pecans)
Avocado oil (for greasing or muffin liners)
Instructions:
Preheat Oven:
Preheat your oven to 180°C (360°F). Grease a muffin tin with avocado oil or line it with paper muffin liners.
Prepare the Oatmeal Mixture:
In a large bowl, combine the oatmeal with the warm milk. Stir and let it sit for a few minutes to allow the oats to absorb the milk.
Prepare the Apples:
Peel, core, and chop the apples into small pieces. Add them to the oatmeal mixture.
Mix the Batter:
Stir in the melted butter, a pinch of vanillin (or vanilla extract), and the chopped nuts.
In a separate bowl, beat the eggs and then mix them into the oatmeal and apple mixture until well combined.
Fill the Muffin Tin:
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake:
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool and Serve:
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
Serving Suggestions:
Enjoy these muffins on their own as a quick breakfast or snack.
