Instructions
1. Prepare the Chicken
Begin by preheating your oven to 375°F (190°C). Using a sharp knife, slice a pocket into the side of each chicken breast. Be careful to avoid cutting through to the other side. This pocket will hold your creamy, cheesy filling.
2. Prepare the Cream Cheese Filling
In a medium bowl, mix together the softened cream cheese, crumbled bacon, and shredded mozzarella cheese. Season the mixture with salt and pepper. For a flavor twist, you can also add a pinch of garlic powder or some finely chopped jalapeños.
3. Stuff the Chicken Breasts
Generously spoon the cream cheese mixture into each chicken breast pocket. Ensure each piece is evenly stuffed for consistent flavor. Use toothpicks to seal the pockets if needed, so the filling stays inside while cooking.
4. Set Up the Breading Station
Set up three shallow bowls: one with flour, one with the beaten eggs and milk, and the third with crushed Doritos. The key to a crunchy crust is to make sure the chicken is well-coated in each layer.
5. Bread the Chicken
Coat each stuffed chicken breast first in flour, shaking off any excess. Next, dip it into the egg mixture, ensuring it’s fully covered. Finally, roll it in the crushed Doritos, pressing the crumbs firmly onto the chicken for a thick, crunchy coating.
6. Sear the Chicken
