High-Protein Cottage Cheese Egg Bites

Ingredients (makes ~10–12 bites)

6 large eggs
1 cup cottage cheese (full-fat or low-fat)
½ cup shredded cheese (cheddar, mozzarella, or your choice)
½ cup diced veggies (bell peppers, spinach, onions, mushrooms)
¼ cup cooked protein (optional: bacon, ham, turkey, or sausage)
Salt & pepper to taste
Optional: garlic powder, paprika, or chili flakes
🔪 Instructions
Preheat oven
Set to 350°F (175°C).
Lightly grease a muffin tin or use silicone molds.
Blend base
In a blender, mix eggs + cottage cheese until smooth.

Add fillings
Stir in shredded cheese, veggies, and protein.
Season with salt, pepper, and spices.
Fill muffin cups
Pour mixture evenly into each cup (about ¾ full).
Bake
Bake for 20–25 minutes until set in the center.

Let cool for a few minutes before removing.
