Ingredients

4 bone-in, skin-on chicken thighs and drumsticks
1 cup buttermilk
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper

4 large russet potatoes, peeled and chopped
4 tablespoons butter

Fried Chicken:
Marinate the chicken: In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken pieces, coating them well. Cover and marinate for at least 1 hour (overnight for best results).
Prepare the coating: In another bowl, mix the flour and baking powder with a pinch of salt and pepper. Dredge each piece of chicken in the flour mixture, making sure it’s fully coated.
Fry the chicken: Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). Fry the chicken in batches, about 8-10 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Drain on paper towels to remove excess oil.
Mashed Potatoes:
Boil the potatoes: Place the peeled and chopped potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes or until the potatoes are fork-tender.
Mash the potatoes: Drain the potatoes and return them to the pot. Add the butter and milk (or cream). Mash until smooth and creamy. Season with salt and pepper to taste.
Serve: Garnish the mashed potatoes with fresh parsley if desired, and serve alongside the fried chicken.
