Banana Foster Pudding

Ingredients
For the Banana Pudding:

6 Egg Yolks
125 g Sugar
1 teaspoon Vanilla Extract
2 Ripe Bananas
1 l Milk
3 tablespoon Cornstarch
20 ml Milk
For Bananas Foster:

10 g Butter
50 g Sugar
1 Banana
Instructions
Separate six egg yolks from the white and place the egg yolks in a large bowl.
Add sugar and vanilla extract, and whisk together until well combined.
In a medium bowl, place ripe bananas and mash them with a fork, add mashed bananas to the egg yolk mixture, and mix well to combine.
Pour milk over the egg yolk banana mixture and whisk well to combine.
In a small bowl, place the cornstarch and add a little milk, mix well until the cornstarch dissolves completely.
Pour the milk and cornstarch mixture into the bowl with the egg yolk banana mixture and mix well to combine.
Pour the mixture into a saucepan and cook over low heat stirring constantly with a whisk to avoid the mixture sticking to the bottom of the saucepan.
Continue cooking for about 10 minutes or until the mixture thickens.
Pour the mixture into 4 dessert glasses, let them cool down and set.
Add butter to a pan and melt.
Add sugar over melted butter, mix well, and melt.
Cut a banana into pieces, add to the caramel, and mix well to combine until the banana is coated with caramel.
Add the bananas foster over banana pudding, then chill for at least 3 hrs or until set.
