Ingredients
For the Beef Chops:
4 bone-in beef chops (about 1 inch thick)
3 tablespoons olive oil
4 tablespoons butter (divided)
4 cloves garlic, minced
2 sprigs fresh thyme
Salt and pepper to taste
Fresh parsley for garnish (optional).
For the Cheesy Potato Bake:
4-5 medium potatoes, thinly sliced
1 medium onion, thinly sliced
2 cups shredded cheddar cheese
1 cup milk
1/2 cup sour cream
2 tablespoons butter
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
1. Prep and Preheat
Preheat the oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with butter or oil to prevent sticking.
2. Prepare the Potato Bake
In a large skillet, melt 2 tablespoons of butter over medium heat.
Add the sliced onions and sauté until soft and translucent (about 5 minutes). Stir in the garlic powder, salt, and pepper to taste.
In the greased baking dish, layer half of the sliced potatoes followed by half of the sautéed onions and 1 cup of shredded cheddar.
Repeat with the remaining potatoes, onions, and cheese, creating a second layer.
Make the Cream Sauce
In a medium saucepan, combine the milk and sour cream.
Heat over medium-low until warm (do not boil).
Pour the warm sauce evenly over the layered potatoes in the baking dish.
4. Bake the Potatoes
Cover the baking dish tightly with aluminum foil and place it in the preheated oven.
Bake for 30 minutes to allow the potatoes to soften and absorb the creamy sauce.
Sear the Beef Chops
While the potatoes are baking, season the beef chops generously with salt and pepper on both sides.
Heat 3 tablespoons of olive oil in a large skillet over medium-high heat.
Sear the beef chops for 3-4 minutes per side until a golden-brown crust forms.
Remove the beef chops from the skillet and set them aside on a plate.
6. Make the Garlic Butter Sauce
In the same skillet, melt the remaining 2 tablespoons of butter over medium heat.
Add the minced garlic and thyme sprigs, stirring for 1-2 minutes until fragrant.
Return the seared beef chops to the skillet and spoon the garlic butter sauce over the top to coat them evenly.
7. Combine and Bake Again
After the potatoes have baked for 30 minutes, remove the foil from the dish.
Place the seared beef chops on top of the potatoes and drizzle any remaining garlic butter sauce from the skillet over the dish.
Return the baking dish to the oven and bake uncovered for another 30 minutes or until the potatoes are tender and the beef chops are cooked to your desired doneness.
8. Rest and Serve
Once the dish is out of the oven, let it rest for 5-10 minutes to allow the flavors to settle.
Garnish with freshly chopped parsley if desired, and serve warm.
