Ingredients:
2 cups cooked rice (preferably day-old)
1 chicken breast, diced
4 garlic cloves, minced
2 eggs, beaten
2 tablespoons soy sauce
2 tablespoons vegetable oil
Salt and pepper, to taste
Instructions:
Cook the Chicken:
Heat 1 tablespoon of oil in a pan. Add the diced chicken, season with salt and pepper, and cook until browned and fully cooked. Remove and set aside.
Sauté Garlic:
In the same pan, add the remaining tablespoon of oil. Sauté the minced garlic until fragrant, about 1 minute.
Scramble Eggs:
Push the garlic to the side and pour in the beaten eggs. Scramble until fully cooked.
Add Rice:
Add the cooked rice to the pan, breaking up any clumps. Stir in the chicken.
Season:
Pour in the soy sauce and stir-fry everything for a few minutes. Adjust salt and pepper to taste.
Serve:
