BANANA TURNOVER

Ingredients:
For the Vanilla Dough:
1 cup sugar
125g butter (about 1/2 cup)
2 eggs
2 teaspoons vanilla extract
1½ cups all-purpose flour
For the Banana Filling:

2 ripe bananas, mashed
¼ cup brown sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
For Assembly:
1 egg, beaten (for egg wash)
Sugar and cinnamon mixture (for sprinkling on top)
Directions:
Prepare the Vanilla Dough:
In a mixing bowl, cream together the sugar and butter until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the flour, mixing until the dough comes together.
Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
Make the Banana Filling:
In a medium bowl, combine the mashed bananas, brown sugar, cinnamon, and lemon juice. Mix well and set aside.
Assemble the Turnovers:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness.
Cut the dough into squares or circles, depending on your preference.
Place a spoonful of banana filling in the center of each dough piece.
Fold the dough over the filling to form a triangle or half-moon shape, and press the edges together to seal. You can use a fork to crimp the edges for a decorative touch.
Brush the tops of the turnovers with the beaten egg, and sprinkle with a mixture of sugar and cinnamon.
Bake:
Place the turnovers on the prepared baking sheet.
Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.
Cool and Serve:
Allow the turnovers to cool slightly on a wire rack before serving.
