Ingredients:
200 g dark chocolate (preferably 70% cocoa for an intense flavor)
250 g mascarpone cheese
4 eggs
150 g sugar (white or cane, according to preference)
50 g flour (type T45 or T55)
A pinch of salt
Instructions:
Preheat your oven to 180°C (350°F). Grease and flour a round or square cake pan for easy removal.
Melt the dark chocolate in a double boiler or in the microwave in 30-second intervals. Stir until smooth and free of lumps.
In a large bowl, add the mascarpone cheese. Incorporate the melted chocolate and mix thoroughly with a whisk or spatula until you have a smooth, homogeneous mixture.
Add the eggs one at a time, mixing well after each addition to ensure they are fully incorporated.
Gradually add the sugar, then the sifted flour and a pinch of salt. Mix gently to avoid lumps. The batter should be smooth and glossy.
Pour the batter into the prepared pan and smooth the surface with a spatula if needed.
Bake for about 25 minutes. The center of the cake should remain slightly gooey to maintain its melt-in-the-mouth texture.
Allow the cake to cool to room temperature before carefully removing it from the pan. You can serve it warm or cold, according to your preference.
