Crispy Mexican Pizza with Seasoned Beef and Refried Beans Recipe

Ingredients for Crispy Mexican Pizza
To prepare this comforting Mexican pizza recipe, you’ll need:

FOR THE TORTILLAS

1/4 cup vegetable oil
16 corn tortillas (6-inch)
FOR THE MEXICAN PIZZAS

2 cups refried beans, warmed (16-ounce can)
1 teaspoon vegetable oil
1 pound ground beef
1 tablespoon taco seasoning
2 cups enchilada sauce (or use taco sauce)
8 ounces cheddar cheese, shredded
Toppings: Diced tomato, sliced black olives, green onion, hot sauce
Salt to taste
Prepare the Tortillas: Heat the vegetable oil in a pan over medium heat. Add the tortillas, 1-2 at a time, and lightly fry each side for 2-3 minutes, or until golden brown and crisp. Drain excess oil on paper towels and lightly season with salt.
Preheat the Oven: Set your oven to 350°F (175°C) to prepare for baking the pizzas.
Cook the Beef: In another pan, heat 1 tablespoon of vegetable oil over medium heat. Add the ground beef and cook for 6-7 minutes, or until browned. Stir in the taco seasoning and 1/4 cup of water. Simmer for 10 minutes to let the flavors meld.
Assemble the Pizzas: On a baking sheet, arrange 8 of the crispy tortilla shells. Top each with a layer of enchilada sauce, refried beans, and seasoned taco meat. Place another crispy tortilla on top, then add more enchilada sauce and shredded cheddar cheese.
Bake: Transfer the baking sheet to the oven and bake for 10 minutes, or until the cheese is melted and bubbly.
Garnish and Serve: Once out of the oven, top the pizzas with your favorite toppings like diced tomatoes, black olives, green onions, and a dash of hot sauce. Serve immediately and enjoy!
