Ingredients
1 medium cauliflower, cut into florets
2 tablespoons olive oil
Salt and black pepper to taste
1 cup shredded cheddar cheese (or your favorite cheese blend)
1/2 cup grated Parmesan cheese
1/2 cup sour cream
1/4 cup milk (or plant-based milk for a dairy-free version)
Instructions
Preheat your oven to 400°F (200°C).
In a bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
Spread the cauliflower in a greased baking dish.
In another bowl, mix together the cheddar, Parmesan, sour cream, and milk until creamy.
Pour the cheese mixture evenly over the cauliflower.
Cover the dish with aluminum foil and bake for 20 minutes.
Remove the foil and bake for an additional 10–15 minutes, until the top is golden and bubbly.
